Game Terrine

Game makes a great terrine, you can use game birds such as partridge, pheasant or Guinea fowl. I like to sous vide the breasts and press them with reduced stock, you can also add liver or vegetables. Keep in the seasons and serve with something like pears and hazelnuts.
